The optimal ratio of tenderness by high fat infiltration we achieve by utilizing the hindquarter’s muscles known as silver side. We then cure these by following the traditional Castilian method, which consists of hanging them inside of our air-drying cellars situated within the rural, pollution-free, unspoiled fields of Northern Spain. It is only after the exact period of eight months that our Air Cured Wagyu, becomes the unusual, rare, and exquisite delicacy that it is.
